Beignet


Ingredient :

1 sachet of active dry yeast
1 cup warm water
1/4 cup sugar (i use super fine)
1/2 tsp salt
2 eggs, beaten
1/2 cup evap. milk
4 cups flour
1/8 cup butter, softened
confectioners sugar

Preparations :

1. In a mixing bowl, put yeast over the warm water, add sugar, stir (using wooden spoon), let stand for 5-7 minutes.
2. Add salt, beaten eggs, and evap milk. Mix it with the dough hook on low speed.
3. Add 2 cups of flour, and continue mixing until they come together.
4. Add butter, beat a little bit more until butter incorporated.
5. Off the mixer, then put the dough on a clean and floured board.
6. Knead the dough and add the rest of the flour until dough doesn't stick to our hand, just like we knead bread dough. Add more flour if it's necessary.
7. Place dough in a large bowl, cover with napkin or plastic wrap, and refrigerate for about 3-4 hours or overnight.
8. When the dough is ready, remove from refrigerator, let it stand for about 30 minutes
9. Roll out on a floured board about 1/4 inch thickness, and cut into about 3 inches squares
10. Fry beignet at 360 degrees F for 2-3 minutes until they're puffed and golden brown on both sides.
11. Dry them on a paper towel and sprinkle with confectioners sugar.
12. Best served with hot Café du Monde's café au lait..!
